Our History

 
Martino Consoli was born in a family of breeders, and after years of work at the side of the dairy masters of the Valle d'Itria, in 1986 he decided to open the Caseificio Consoli in Locorotondo. Thanks to selected raw materials, both from family farms and trusted partners over time, attention to the entire production process, from stall to product, and respect for traditions our business have grown over time. The mix of tradition and innovation, has made of us a reference point not only for local customers, but also partners of many restaurants, b&b and prestigious farms in Puglia and Italy.

The territory

 
The farm is located in Locorotondo, in the heart of the Valle d'Itria, an uncontaminated land, famous for its Trulli and farms, always dedicated to the production of famous agro-food excellence in Italy and worldwide. Oil, wine, salami and dairy products have always been a key elements of the local economy evolved thanks to the combination of traditional methods and new technologies and the synergies between tourism and craftsmanship.

 
 
 
 
 
 

 
 
 
 

Our services

 
You can enjoy of guided tours thanks to our staff that will be happy to show you the art of wine of this place with a thirty years tradition and you will assist with the making of mozzarella by an experienced dairy master.

On special events such as weddings or other types of occasions, the Caseificio Consoli Casaro will make mozzarella on-site. You can also order tailored gift box during holiday periods. We will also delivery them directly to your home.

The Caseificio Consoli has two retail stores in Locorotondo, the first one in via Fasano where there is also the laboratory, the second in via Montello 23.
